To make the mushroom ragout: In a large frying pan over medium heat, melt the butter. Add the shallots and a pinch of salt and cook, stirring, until the shallots are soft but are not browned, about 5 minutes. Transfer to a bowl and return the pan to the heat. Add a few handfuls of mushrooms and a pinch of salt to the dry pan. You want to add enough mushrooms to cover the bottom of the pan, but not so many that the mushrooms crowd and steam. Fry the mushrooms, stirring frequently (they’ll squeak in the pan!), until they are beginning to brown and soften, 3 to 4 minutes.
