Our Favorite Winter Dish is Michael Mina’s Egyptian Koshary
INGREDIENTS 2 Tbsp Extra-virgin olive oil 2 cups Long grain rice 3 cups Water 1 tsp Sea salt Pinch fresh ground pepper DIRECTIONS Heat the olive oil in a saucepan over medium heat. Add the rice and stir gently until the rice smells fragrant and is coated with oil. Add 3 cups water and 1 teaspoon of salt. Bring to a simmer, then reduce the heat to low, cover and simmer for about 10 minutes. Then turn off the flame and leave on the stovetop for an additional 15 minutes.
