More recently, a few start-ups emerged dedicated to creating instant coffee that tastes as expressive as that original cup of coffee — before the extraction and drying process, which roasters say usually kills the flavors. These new companies are partnering with specialty coffee roasters — such as Pennsylvania’s Swift Cup with Ritual — to transform their higher quality coffee with a similar but slower process.
